Any leftover cordial for breakfast cocktails, desserts, or to make another batch of bikinis.

The Bikini Cocktail

Makes enough for 10 guests

For the Clementine Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Cocktail (yields 850ml, to serve 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Instructions

To prepare the Cordial: Put the listed items in a pot, heat until it reaches a simmer, stirring so the sugar melts. After that, remove from the heat allowing it to reach room temperature completely. Decant into an sealable bottle, seal and refrigerate it chilled, it will last for about one month.

For the Batch Mix: Pour all the liquid ingredients into a sizeable container, leave to sit for 60 minutes, then strain preferably using muslin, so it's completely strained.

To serve: Add 85ml from the cocktail base into your mixing glass filled with ice, and stir carefully for about 60 seconds to cool it down. Strain into a cold coupe glass or a similar vessel, garnish with a few cranberries adding the final touch by giving it a light spray with the mandarin essence above the glass.
